How would I do this?

Me again.  I’d like to find out how to get my menu working in the following way:

1. Generated strictly from the pages in the site
2. Horizontal menu at top shows first level pages only.  There is a vertical menu in the sidebar.
3. When you click on a page, you are, of course, taken to that page.
4. If that page has child pages, a widget in the side bar shows the child page only, not higher level pages or the grandchild pages.
5. Clicking on a child page leaves the top menu unchanged, but the sidebar menu shows any children of this page.

Hope that makes sense, and is it possible?

That is definitely possible, but is not something that will ever be added to the Multi-level Navigation plugin.
