You can use a Suckerfish script with anything you want.
Or perhaps you are referring to the PixoPoint Menu or Multi-level Navigation plugins and whether they can display a list of categories in a single dropdown? In which case yes, they can. Use just need to select the "single dropdown" option in the plugins’ admin page.
