    I do not want to make the archives page available through the menu.
    Can I remove this?

    If it’s a WordPress page, then you can use the exclude page ID’s option.

    If it’s the actual archives menu item, then it depends on what plugin you are using, but essentially you just remove it from the menu in the same way you change everything else.
