    When I view the source of my page, I notice that the drop-down list is a UL. But I can’t find where to add items to the UL? I’d recreate the menu all over, but have too many parameters already set.

    Have you been to the plugins admin page? There is a "Menu Contents" section where you can add new options to the menu (ie: put new items inside the UL).
