    I have set up a whole load of blank pages in WP to create the menu structure I want. 

    Then I set up the equivalent items in a shopping cart which uses an extra /product-page/ part in the URL.

    Is it possible to get the menu to redirect to this page rather than the WP page?

    For example, I would like http://memo.nutwork.com.au/afl/ to redirect to http://memo.nutwork.com.au/products-page/afl/

    Yes that is possible, but you would need to do that either via a plugin or by modifying your .htaccess file.
