Need menu to begin on a Sub Category

I need the menu to begin on the sub categories rather than the parent category.

Example: 
Shop  (parent)
-Mens
-Womens
–tops
–bottoms

I need the menu to display "Mens" and "Womens"
in which the "tops" & "bottoms" would appear on rollover.

Is there a custom code to insert for this?
Any suggestion would be MUCH appreciated.
